Gluten Free Almond Blueberry Donuts

For all my lovely gluten free babes out there, I spent the afternoon in my kitchen working on a #donut recipe just for you. It was one of the first times I have tried baking with just almond flour, so these turned out a little crumbly, bit still delicious. Any tips on how to make them stick together, please please comment below!

I used King Arthur Finely Ground Almond Flour as my base. It has a very mild almond flavor, which I then used Almond extract to elevate. These would actually be completely delicious on top of oatmeal!

Ok enough about the ingredients, here is the recipe!

Ingredients

  • 1 1/2 cups almond flour

  • 1/4 cup brown sugar

  • 1/2 Cup granulated sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/8 tsp nutmeg

  • 1/2 cup oat mylk (this can be any milk/milk substitute)

  • 1/2 tsp almond extract

  • 1 egg

  • 3/4 cup fresh blueberrit’s (+ 1 tbsp flour,toss blueberries in almond flour prior to baking; this will prevent them from sinking to the bottom.)

Directions:

  • Preheat Oven to 350 degrees F

  • Spray the heck out of your donut pans (these are VERY crumbly and will get stuck otherwise)

  • Mix dry ingredients (almond flour, sugars, salt, baking powder) in large bowl

  • Whisk wet ingredients (mylk, egg, almond extract) in small bowl

  • Form well in dry ingredients and pour wet mix in, gentle combine the two

  • Fold in the blueberries

  • Either pipe or spoon the mixture into greased donut pans.

  • Bake for 20-25 minutes, until tops have nice golden brown color.
