Hearty Gluten Free Oatmeal Pancakes

On the Go Pancakes

This is a total “go-to” for Chris and I during the week because these pancakes are easy to make, freeze and then pop in the toaster for an actual healthy breakfast when we have to get up and out of the house early!

Ingredients:

  • 1 1/2 rolled oats

  • 1/2 all purpose flour (substitute almond flour if going gluten free)

  • 1 tsp sugar

  • 1 tsp salt

  • 3 large eggs

  • 1 3/4 plain greek yogurt

Directions:

  • In large bowl mix dry ingredients: oats, flour, sugar, salt

  • In small bowl combine wet ingredients: yogurt & eggs until smooth

  • Pour wet ingredients into dry and combine until dough has formed

  • Pour 1/4 cup of batter onto skillet over medium high heat, allow to brown and flip once bubbles appear around the edges, brown second side of pancake.

  • Enjoy with maple syrup, fresh fruit, and nut-butters of your choosing.
